Royal wedding inspired bundt cakes

There’s so much hype around the Royal Wedding taking place this Saturday, especially around the choice of wedding cake; elderflower and lemon. Personally I adore the flavour of elderflower and often find myself buying drinks and sweet treats with elderflower in them. Around Christmas time a local gin distillery called Fourfolk Gin came to trade at the Knarsborough market, their gins are gorgeous and in particular I loved their elderflower gin, so I took a little bottle home to treat myself.

Remembering I still have some of this lovely gin left, I decided to create some bundt cakes inspired by the royal wedding cake flavours. These bundt cakes are made with lemon sponge, drizzled with a simple syrup made from elderflower gin, lemon juice and dried elderflowers which were later strained to leave a smooth syrup. The glaze is lemon with a hint of elderflower gin, the cakes are then sprinkled with dried elderflowers.
