After finding my mini bundt pans and falling in love with them, I decided to see what more Nordic Ware had to offer. Well…let me tell you, I found a new cake pan that blew my mind. I cannot contain my excitement for what I have to share with you today… mini gingerbread houses made from cake! They are the cutest little cakes I’ve ever seen and look so adorably festive sprinkled with “snow” (icing sugar!).
These gingerbread houses, although extremely cute, are strictly for adults as they have a boozy kick of brandy and a delicate addition of dates. The result is a fragrant and spicy gingerbread with a fruity and boozy hit, they are utterly divine. My recipe was inspired by A Cookie Named Desire who also found the wonderful Nordic Ware pan that I used. I adapted the recipe as I wasn’t a fan of the texture of figs in the gingerbread, it made the sponge a little gritty so I swapped these for dates. I also removed the cardamom from the recipe as in my opinion it overpowered the other spices. To me, a gingerbread cake needs to have a punch of ginger and just a subtle hint of other spices like nutmeg and cinnamon.
If my customers love these gingerbread houses as much as I do, they will go down a storm at my next market! Yes I know it’s a little early to be bringing out gingerbread houses, but I couldn’t keep them to myself any longer… these cute cakes will be appearing at my market stall at Knaresborough Farmer’s Market this Saturday.
