I can’t believe it…. It’s getting to that time of year already! It’s like Christmas has exploded all over Ilkley, the shop fronts and supermarkets are full of festivities and I’m getting giddy just thinking about this magical season ahead.
For my market stall at Knaresborough Famer’s market, I’ve decided to add in a couple of festive bakes along with the seasonal bakes I had planned. I haven’t gone for a totally festive menu just yet as November is still a bit too early to bring the full festivities.
There are many things that I associate with Christmas, and Ferrero Rochers are one of them. Yes, I know they are around all year, but they are a treat that I rarely have unless it’s in December. I came across this recipe for a Ferrero Rocher cake by Liv for Cake and drooled just looking at the photos! I have to say, the cake is utterly delicious. It’s extremely rich and tastes just like a Ferrero Rocher, you certainly don’t need a big slice but it’s indulgence at its finest.
The sponge has ground hazelnuts and hot coffee in to give it a richer, nutty depth and enhance the chocolatiness of the cake. The cake has three layers, sandwiched together with Nutella buttercream (absolute heaven!!) and a hazelnut and chocolate meringue to give a light crunch, just like the crunch you get when you bite into a Ferrero Rocher.
The sponge was so wonderfully soft that it was almost impossible to get the cake slice to stand upright! I managed to get one photo (above) before it decided to topple over, thankfully the photo I got was in focus. I decided to spray the Ferrero Rochers on top with some gold lustre dust to make this cake even more decadent. It’s certainly a festive treat and one not to miss if you come and visit my stall this Saturday. Keep an eye out for the rest of the festive bakes to be announced this week!
